Do you like strawberries? I love them! They are one of my favourite things to snack on and they are great to bake with as well. I bought a box of fresh and delicious strawberries from the market the other day and thought of baking some scones with them.
Baking scones is incredibly easy and once you get the hang of it, you can experiment with SOOO many flavours and combinations- it never gets boring! At least, I know I wont be bored because thats how much I love eating scones! They are great for breakfast (as a treat, of course) and amazing with tea in the afternoons.
These scones are buttery and studded with strawberries. They have a sugar drizzle in the end, so I will serve them just as it is. But they also taste good when they are cut in half and served with either butter, jam or clotted cream. Butter spread on a warm scone is pretty darn tasty-YUM!
These scones freeze well and therefore can be made in advance and stored till you need them. I baked the scones, let it cool down completely and then stored them in ziploc freezer bags. This way, they can be stored for 1-2 months and when needed they can be warmed in an oven or toaster. If warming in an oven, set the temperature to 300F and heat for 10-12 minutes.
OK, now comes the recipe!
Prep Time- 5-10 minutes
Total time- 25-30 minutes
- Strawberries- 1 cup, fresh and diced
- All purpose flour- 2 cups
- Butter- 1/2 cup, cold butter-cut in small cubes
- Sugar- 1/2 cup granulates sugar (use 1/4 cup if strawberries are too sweet)
- Baking powder- 1 tbsp (I know it sounds a lot, but you need it)
- Salt- 1 tsp
- Egg- 1 nos
- Sour cream- 2 tbsp (you can also use full-fat cream, thick yogurt, light cream or even buttermilk-same quantity)
- Vanilla extract- 2 tsp
- Milk- 2-3 tbsp (for brushing scones)
- Powdered sugar- 1 cup
- Water/milk- 2 tbsp
- In a big bowl, add flour, salt, sugar, baking powder and vanilla extract. Mix well.
2. Rub your fingers through the butter and flour mixture till it resembles fine crumbs. You can use a mixer on low speed, use a pastry cutter or even use a fork to work the butter in the mixture. (The mixtures needs to be cold, so if you feel the butter has become soft due to the warmth of your fingers, place the bowl in the fridge for 10-15 minutes and then resume again)
3. Add the eggs and sour cream to the mixture and mix well. Dice the strawberries and add them to the mixture as well.
4. Mix the diced strawberries into the mixture until just incorporated. While working the mixture, some strawberries may get mushed-thats a good thing. Tip the mixture onto a floured surface, flour your hands and gently pat and shape the mixture into a 1 inch thick circle.
5. Pre-heat oven to 375 degrees F. Place parchment paper on the baking sheet and carefully transfer the scones onto the parchment paper.
6. Bake for 18-20 minutes. Break a scone and check the center- it should be moist; if its gummy-that means it needs more time to bake.
7. Once, the scones are baked, transfer them to a cooling rack for couple of minutes. In the meantime, mix the powdered sugar and the water to make the sugar glaze. Use a spoon/fork to drizzle the glaze on the scones. Done, enjoy!
